OVERVIEW
Pulses, including beans, peas, lentils and lupins, have been recognised for centuries as a cornerstone of a healthy diet in many cultures. However, research is only starting to unlock the mechanisms to explain their role in a range of conditions, from gut health to cognitive decline.
At this one-day symposium, leading researchers examined the latest research on the health effects of pulses and highlight research gaps, introduce intriguing new innovations being used to incorporate pulses in to the diet and identify opportunities for future work. They also discussed the disparity between current intakes and recent global consensus on recommended intakes.
